Warm the olive oil in a soup pot over medium heat. Add the onions and sauté until they're translucent, about 5 minutes.
Add the carrots, water, and Kitchen Accomplice Chicken Broth Concentrate
or Chicken Bone Broth Concentrate
and bring the mixture to a boil over medium-high heat.
Stir in the tortellini, reduce the heat to medium, and simmer for 3 minutes. Add the spinach and simmer for 4 more minutes, until the carrots are tender and the tortellini is cooked through. Season the soup to taste with salt and pepper and serve sprinkled with Parmesan if you like.
