FAQs

Q: Is there any MSG in any of the Kitchen Accomplice products?

Some of the Kitchen Accomplice broth concentrates do contain yeast extract which FDA considers as containing naturally occurring MSG.  That said, ALL meat, mushrooms, cheese and tomatoes (just to name a few of endless natural foods) also contain free glutamates in the exact same way that yeast extract does.  If you have a sensitivity to yeast extract, then we recommend using our More Than Gourmet brand stock reductions such as Glace de Viande Gold.  Products bearing the More Than Gourmet brand do not contain any yeast extract and are classic bone stock reductions (i.e., bone broth concentrates).

Q: What are the “natural flavors” used in your products?

The natural flavors in our KA products are a proprietary blend of seasonings and spices. If there is a specific ingredient that you have concerns about, please contact us and we can work with you to get an answer.

Q: Can I use my product past the “Best Buy” date?

There is no food safety issue with keeping and using product past the use by date. There may be changes in the flavor over time, but there is no concern with food safety as long as it is kept refrigerated after opening.

Q: What is the modified food starch that is used in the products?

The food starch used is gluten free as it is derived from Tapioca.

Nutritional FAQs

Q: What is yeast extract, and is it natural?

The yeast extract we use in KA broth concentrates is produced when naturally occurring enzymes present in edible yeasts or intentionally added food grade enzymes act upon yeast. This results in yeast extract, which is primarily composed of amino acids, peptides and carbohydrates. Salt may be added to produce the final ingredient. Production of yeast extract involves only minimal processing. Therefore, the yeast extract we use conforms to the use of “natural” as defined by the FDA in that nothing artificial has been added. It also conforms to the USDA definition of being minimally processed.

Q: What is maltodextrin, why is it used, and is it natural?

Maltodextrin is a pure carbohydrate (starch) derived from corn or potatoes in the U.S. The maltodextrin we use is derived from non-GMO corn (identity verifiable and traceable), is virtually flavorless and does not contain chemical preservatives, artificial colors or flavors, or any other artificial or synthetic ingredient.  Further, the maltodextrin we use is listed as acceptable by Whole Foods Market, meets the FDA’s stance on the use of the term “natural” and has been approved by the USDA for use in products marketed with the “natural” claim.

Q: What is xanthan gum, why is it used, and is it natural?

Xanthan gum is a powder used as a thickening and stabilizing ingredient by food companies and gluten-free bakers and is found in many home kitchens. It is every bit as natural as beer, wine, cheese, vinegar, etc. – anything fermented or made with microorganisms, such as probiotic cultures used to make yogurt. Xanthan gum is considered an acceptable ingredient by Whole Foods Market, is acceptable for use in organic certified products in the U.S, Canada and the European Union, and the xanthan gum we us is non-GMO.

Q: What do you mean by non-GMO, and is your product non-GMO certified?

GMOs (genetically modified organisms) are the result of the intentional gene modification of a living thing, typically plants, to create an improved or more durable version of that organism. KA broth concentrates do not contain any GMO or GMO-derived ingredients, as verified with our suppliers, and therefore are non-GMO.  These items are not certified or verified as non-GMO, but we exploring this verification with a major certifying body.    All Organic Certified Products are certified Non-GMO because all organic products are inherently Non-GMO.

Q: How much broth can I make with a bottle of KA broth concentrate?

The conventional broth products make 28 cups of broth- or the equivalent of 7 – 32 oz cartons you would buy in a store. The bone and no-bone broth products will make 14 cups of broth per bottle. Use as much or as little as you’d like to create your perfect broth flavor.
